Café and Bar Manager

Freemasons’ Hall are looking to hire a Café and Bar Manager who has excellent customer service skills and the ability to influence the team around them, someone who has an energetic approach and wants to be part of a proactive management team.  

If you are an energetic and highly motivated individual with high attention to detail and at least 3 years’ experience in managing cafes, bars or similar catering operations, we would like to hear from you. 

Purpose of the Job:

To organise daily operations and motivate the team to provide outstanding customer service. You will have full control over the café and bar, from ordering the food and beverages to recruiting and training the staff.   A hands-on approach is required as you will be expected to support with café/bar service during peak times.

You will help take the current operation to the next level, improving maximum profitability, whilst making improvements to our public offer.

You will want to make the Café and Bar at Freemasons’ Hall a destination in its own right and work together with other departments such as Communications, Events & Hospitality, the Shop, Visitor Services and the Museum to help make this happen.

You will guide and train your team to ensure everyone in the Café and Bar presents a friendly and welcoming environment in which all customers, be that the public, the membership, staff or volunteers, feel comfortable, welcome and receive an outstanding level of customer service. 

Key Responsibilities

  • Manage the day to day operational function of the café and bar
  • Financial and budget management including forecasting, cost control and forward planning
  • Ensure a high level of customer service is delivered by the team at all times 
  • Implement a customer feedback process; analyse response and recommend improvements
  • Manage and record all staff training to include; food handling, food safety legislation, temperature controls, cleaning, drinks preparation, use of coffee and bar equipment. 
  • Coordinate all food and beverage supplier orders, with a specific aim to improve the offer to include seasonal and fresh products.
  • Input directly into the pricing strategy, balancing product quality with affordable and competitive pricing structures, whilst maximising profitability. 
  • Work with internal departments to maximise opportunities to promote the café and bar and develop new audiences with the aim of maximising profitability. 
  • Regular liaison with in-house hospitality team to support with special events and buffet lunches

Other responsibilities

  • Daily management of all cash handling, float and till reconciliation 
  • Maintain and develop food safety policy, to include HACCP and Food Safety Management Systems to ensure all cleaning and food safety legislation is followed and correctly recorded.
  • Improve and maintain Stock Management records whilst maximising the use of a new EPOS system.
  • Manage staff rotas, payroll and leave requests.
  • Support with other tasks as associated with the overall management of the business. 

Person specifications:

You will need to demonstrate:

  • Proven leadership and organisational skills with the ability to work under your own initiative.
  • Awareness of Food Hygiene and HACCP legislation with a Level 4 Food Hygiene Certificate (assistance in achieving this level can be provided).
  • Proven management skills where you can demonstrate that you have recruited, developed and trained a team.
  • Proven interpersonal skills and ability to develop good internal relationships with colleagues 
  • A working knowledge of budgets and budgetary controls.
  • Computer literacy and the ability to maintain and update policy documents, stock control systems, EPOS and maintain records for audit purposes.

Hours:

The successful applicant will work five days a week (40 hours). Core days are Mon-Fri however, working some evenings and weekends will be expected.
